I wanted my kitchen to feel like the bakeries I'd visited in Europe.

Before Sienne's Table, there was another table, covered in eye charts and decades of patients who'd become something closer to friends. Sienne spent years as an optometrist, and loved it. But there was always the other part of her. The part that kneaded dough at five in the morning.

A note on living with Type 1 diabetes: it taught Sienne to see food differently. Not as restriction, not as fuel. As something to be made slowly, with real ingredients, and shared with the people you love.

Recipe No. 07

Basil Olive Oil Cake
with Rosewater Glaze

Serves 8  ·  One loaf  ·  45 minutes

Ingredients

  • 1 ½ cups flour
  • ¾ cup sugar
  • ½ cup best olive oil
  • 3 eggs
  • A handful of basil leaves
  • Zest of a lemon
  • A splash of rosewater

Method

Whisk eggs with sugar until pale, then the oil. Fold in flour, zest, and chopped basil. Bake at 350° for 35 minutes. Cool. Glaze with powdered sugar and a spoon of rosewater.
